Ingredients

thick
rindless smoked bacon rashers, diced

Onion
chopped

carrots
sliced
2
celery sticks
chopped
1
turnip
chopped
1
leave
large potato
you can use sweet potato orout

bouquet garni

ltr water or chicken stock
salt and pepper
Instructions
Heat a large, heavy based saucepan or flame-proof casserole and cook the bacon over a medium heat, stirring for 4-5 minutes.
Add the chopped onion, carrots, celery, turnip and potato (if using) and cook for 5 minutes.
Add the lentils and bouquet garni and pour in the water or stock.
Bring to the boil, reduce the heat and simmer for 1 hour, or until the lentils are tender.
Remove and discard the bouquet garni and season the soup to taste with salt and pepper if necessary.
