Bacon is my guilty pleasure!! We all know that processed meat has a bit of a bad rep but eaten very occasionally it won’t do you too much harm. If you don’t want it, you can either leave it out or substitute with some turkey bacon. Personally I can’t resist!

Ingredients
- 450 g thick rindless smoked bacon rashers, diced
- 1 Onion chopped
- 2 carrots sliced
- 2 celery sticks chopped
- 1 turnip chopped
- 1 leave large potato you can use sweet potato orout
- 85 g puy lentils
- 1 bouquet garni
- 1 ltr water or chicken stock
- salt and pepper

Instructions
- Heat a large, heavy based saucepan or flame-proof casserole and cook the bacon over a medium heat, stirring for 4-5 minutes.
- Add the chopped onion, carrots, celery, turnip and potato (if using) and cook for 5 minutes.
- Add the lentils and bouquet garni and pour in the water or stock.
- Bring to the boil, reduce the heat and simmer for 1 hour, or until the lentils are tender.
- Remove and discard the bouquet garni and season the soup to taste with salt and pepper if necessary.
