My favourite type of meal is one that is whipped up in no time, everyone enjoys and of course hits the button when it comes to nutrition – and this one does all 3 of those. That is what I call REAL FAST FOOD!!!

Ingredients
- 1 packet tofu (approx 250g) cubed
- 1 Tbsp sesame oil
- 2 Tbsp tamari/coconut aminos
- 1 lime juice only
- 1 tsp apple cider vinegar
- 1 tsp raw honey
- 1 tbsp peanut butter
- 150 g spelt or buckwheat noodles
- 2 carrots grated or spiralised
- 1/4 red cabbage shredded
- 2 handfuls kale scrunched
- 4 spring onions chopped
- 3-4 handfuls beansprouts
- 1 handful fresh corriander
- 2 handfuls cashews preferably activated

Instructions
- Marinate the tofu in the oil, tamari, lime juice, ACV and honey for a minimum of about 5 minutes, up to a few hours before. When ready to eat, fry the tofu in a little oil for about 5-8 minutes, reserving the marinate.
- Cook the noodles as per the packet instructions.
- Mix the remaining marinate with the peanut butter. Add a little water if you need to to make the dressing runny enough to pour.
- Combine the remaining ingredients in a serving dish, along with the noodles and tofu and mix in the dressing.
