This is a nice loaf for satisfying hungry kids or to serve if you have guests. It is quite a solid and dry-ish loaf (as oppose to light and fluffy) so it’s nice served up with some butter or coconut yoghurt and some sliced fruit.

- 3 tbsp heaped apple puree (see below)
- 6 tbsp honey
- 1 ripe banana
- 120 g ground almonds
- 1 tbsp chia seeds
- 200 g brown rice flour
- coconut oil for greasing

- Preheat the oven to 200oc (fan 180oC)
- [To make the apple purée, peel and chop some apples and place in a saucepan with a cm or so of water. Cook until the apples go mushy and then blend. You can add some date or maple syrup and some cinnamon if you wish but I don't tend to bother.]
- Place the apple purée, honey and banana into a large mixing bowl and mash them together with a fork until you have a smooth mix.
- Stir in the ground almonds, chia seeds, rice flour and 4 tbsp water and mix until smooth.
- Grease a standard-sized loaf tin with coconut oil and pour in the mixture spreading it across evenly (it's meant to be a long loaf of about 2-3cm tall).
- Bake for 50 minutes, or until the top turns a golden brown and you can pull a clean knife out of the middle.
