I love a crumble for a quick, throw-together-at-the-last-minute pudding. I’ve made this with all sorts of fruit and it really does work with anything you have lying around. My crumble of the moment is of course rhubarb, apples and a few berries.

Ingredients
- 4 handfuls of fruit (e.g berries apples, pears, rhubarb, mango...)
- 2 tbsp lemons juice
- 4 tbsp maple syrup split
- 1/2 cup ground almonds
- 1/2 cup quinoa flakes
- 2 tbsp olive oil
- 1/2 tsp ground cinnamon

Instructions
- Preheat the oven to 180oC
- Place your fruit in your baking dish and mix in 2 tbsp of the maple syrup and lemon juice
- In a separate bowl mix the almonds and quinoa flakes with the other 2 tbsp of maple syrup, the olive oil and cinnamon and scatter this on top of the fruit
- Bake for about 25 mins until the top is golden and the fruit is bubbling slightly
