- Fry your spinach in a pan with a little butter until slightly wilted
- Boil a pan of water and add a little vinegar
- Give the water a stir to get it swirling, drop in an egg and poach for about 1-2 minutes
- Meanwhile pile your spinach onto a plate, add your other ingredients and drop your egg(s) on top
