Cup
ground almonds
(Or ground shelled peanuts if almonds not tolerated)
1/4
Cup
coconut flour

Tsp
bicarbonate of soda

coconut oil
Melted

coconut sugar

almond butter
(Or peanut butter)

vanilla essence

Good quality dark chocolate chips
Instructions
Heat the oven to around 175oC.
Mix together the ground almonds, coconut flour, and bicarbonate.
In a separate bowl mix the remaining ingredients except the chocolate chips until smooth.
Combine both mixtures then mix in the chocolate chips.
Roll the mixture into small balls and flatten into a greased or lined baking tray.
Bake in the oven for around 10-15 minutes until golden then cool on the tray for a few minutes before transferring to a wire wrack to cool completely.
Store uneaten cookies in the fridge for prolonged edibility!!
