Is it too soon to post another chocolate chip cookie recipe? No, I didn’t think so either. You can never have too many chocolate chip cookies, especially when they taste this good and meet so many dietary criteria!!

Ingredients
- 1 Cup ground almonds (Or ground shelled peanuts if almonds not tolerated)
- 1/4 Cup coconut flour
- 1 Tsp bicarbonate of soda
- 6 Tbsp coconut oil Melted
- 1/4 Cup coconut sugar
- 6 Tbsp almond butter (Or peanut butter)
- 1 Tsp vanilla essence
- 1 egg
- 1/2 Cup Good quality dark chocolate chips

Instructions
- Heat the oven to around 175oC.
- Mix together the ground almonds, coconut flour, and bicarbonate.
- In a separate bowl mix the remaining ingredients except the chocolate chips until smooth.
- Combine both mixtures then mix in the chocolate chips.
- Roll the mixture into small balls and flatten into a greased or lined baking tray.
- Bake in the oven for around 10-15 minutes until golden then cool on the tray for a few minutes before transferring to a wire wrack to cool completely.
- Store uneaten cookies in the fridge for prolonged edibility!!
